Talking Almond Crusted Ranch Chicken

Almond Crusted Ranch Chicken
***********************
6 Chicken Breast Halves
1 Cup Almonds crushed
Hidden Valley Salad Dressing and Seasoning Mix
Hellmans Mayo

In shallow bowl mix packet (I only did a few TBSP) of Hidden Valley with the crushed almonds. Brush both sides of chicken with mayo and roll in almond mixture. Place on stone in oven at 425* for 25 minutes. Enjoy!

I use a Pampered Chef stone cuz it makes the chicken nice and crispy. You could probably use a baking sheet, but might turn out soggy?

Just made this up for lunch and it was sooooooo YUMMY!

a pizza baking stone, you can find them at pretty much any home store. i purchased one recently from Bed, Bath and Beyond for about eight bucks!!!

Everyone should have AT LEAST one! I love mine!

Be careful when purchasing cheaper made stones that are not made in the USA. The US is the only country that regulates the amount of lead in the clay. The Pampered Chef stones are made with lead-free clay. If you use an off brand, watch for little black specks rising to the surface with each use...that's icky lead!

This recipe is YUMMY! I cut up my chicken into little chicken nuggets so I could get more coating on them but the mayo/almond/ranch mixture kind of turned into glue. Anyone have any suggestions how to keep the almond flour stuck to the mayo stuck to the chicken?

Maybe next time I'll use (whole) chicken tenders instead.

This recipe is very similar to another one I do. Try replacing the almond by parmersan. It's really delish.

I've made something really similar and it's divine!

I served ours with softened cream cheese mixed with ranch dressing (packet) to dip it in and my kids about elbowed each other for seconds. LOL

How do you keep the grease from dripping down if you cook it on the stone?

I think the answer is that the stone absorbs the grease. They say never to wash baking stones...just wipe them off.

Just made this for dinner tonight...super easy and delicious The chicken was so moist and the ranch and almonds were a SO good!
