Default Tuna & Cauliflower Bake

This is adapted from a recipe I used to make in my high carbage days.
It is an economical, tasty family dish.

Serves 4

400g (14 oz?) can tuna
4 tablespoons mayonnaise
About 1 kg (32 oz) cauliflower
2 400g cans chopped tomatoes
4 spring (green) onions
120-240g (4-8oz) grated cheese


Steam, boil or microwave cauliflower until softened. Mash, and add butter to taste.
Simmer tomato with spring onion until "dryish." Add a slurp of olive oil if you wish.
Mix tuna with mayo.
Grease a casserole dish.
Layer ½ the mashed cauli into the dish, followed by ½ the tuna mix, followed by a "small" half of the tomato. Repeat the layers and sprinkle with the cheese.
Bake in a moderately hot oven for 20-30 minutes, or until browned.

Total carbs (assuming 8 oz cheese):
40 (after fibre subtracted)
You could decrease the carb count by using slices of fresh tomato instead of canned.

I made this the other night and it was fantastic! My husband just about went ape. Tuna and cauliflower are his favorite foods.

I made it last night, turned out really well. The only thing was, I forgot the mayonnaise, and the cauliflower was a little dry. But other than that it was great, really nice flavor. Next time I'll remember the mayonnaise and also use a little more butter in the cauliflower (I used 1Tb. butter in a half recipe last night).

Total means total, as in the whole thing. 40 carbs per serve would hardly be low carb.

Thanks for clearing that up Rosebud. I am making this for sure. It sounds wonderful. I made the califlower mock potato salad and I am really enjoying that as a side dish with my meat.

Hi Pam,

Basically whichever ones only have tomatoes and nothing else. I'm currently using Coles' Farmland whole ones, 2.1 carbs per 100g. I recently made the mistake of buying the diced ones (same brand), but they have added sugar. Not a huge amount, but 4.9 instead of 2.1 adds up!

Apparently with the new software, the thread (in this case, recipe) rating function doesn't kick in until 5 people have rated the recipe.

To rate the recipe, scroll to the bottom of the page and locate "Rate this thread". Beside it is a drop-down menu where you can select between 1-5 stars.

I've never thought about chicken, Scanance. I can't see why it wouldn't work.
Why don't you give it a try with some cooked chicken? Let us know how it turns out.
