Default Menu For Low Carb diabetics

What would your daily menu look like for those who are low carb Diabetics and keeping the blood sugar under control? Need a understanding of how to do this.

Morning breakfast:
Typically Scrambled Eggs, Omelette or Kippers

Lunch
Beef Salad (Prime Steak Chunks on Lettuce), Subway low carb Salad, Mozarella and Tomato Salad

Dinner
Salmon and Chicken, or Bolognese with Shirataki noodles, or Steak, pork chops

Dessert
1 cube of 70%+ cocoa Chocolate and a Babybel Cheese.


Current BS reading are fasting 3.8 mmol/L and 4.6 mmol/L 2 hours after each meal. last Hba1c reading was 5.9 and I not any meds

Breakfast: 1 or 2 eggs, or hot flax cereal with cream and butter or leftovers from dinner or low carb toast with cheese.

Lunch: Large salad or leftovers from dinner (meat and veggie) or tuna/chicken salad or low carb soup

Dinner: Meat of choice, low carb veggies

Snacks: Cheese, nuts, sugar-free jello

ActionJack, your stats are fantastic (I am from Toronto, Canada, so I love to see those imperial measurements)!

I tend to eat a LowCarb muffin or cranberry loaf (made with Carbquik, bake mix) with coffee for breakfast

Lunch is protein, with vegetables

Dinner is similar to lunch, with nuts and cheese added in.

Since I am Type 1 and take insulin, my BG levels and A1Cs are higher than normal.....I avoid low blood sugars at all cost....when I have them, I feel like I am about to pass out and it almost ruins the day. So I let them run higher than normal.
