Default If Dr. Atkins married an EggMcMuffin....

....and then they had a baby....this is what it would taste like! A Ham, Bacon, and Egg muffin! This is seriously good! I can't remember where I saw the recipe, somewhere over the hundreds I've been browsing lately but I made my own version and it is a winner!

12 slices very thin deli sliced ham, not shaved but close to it
6 pc half cooked bacon (still soft and pliable)
6 eggs
1/4 C finely grated parmesan cheese
pepper to taste

Spray a muffin pan with Pam. Place two pieces of ham in each one, molded around the little muffin sections like a cupcake foil, wrap a piece of bacon around the inside, crack an egg inside the little "ham cup", sprinkle parmesan cheese and pepper on top. Bake at 350 for about 15-20m. Enjoy!!

I whirled the Parmesan in my magic bullet to get it really finely ground. Or you can use the stuff in a jar but that might have extra carbs, idk.

Makes six servings (2 muffins per serving)

Fiber: 0
Carb: 2
Pro: 23

Sounds really tasty, Angel!!

Before I got my silicone muffin moulds I used to save the wrappings from butter packs and use them to wipe a film of butter around the inside of muffin tins instead of using the spray.

I have a silicone cake pan and muffin pans and I find stuff still sticks to them. Maybe I just need a better brand?

And I noticed a typo. It's 3 servings not six if you eat two. The nutrition stats are correct for a 2 muffin serving. Math is hard :P!
