Default 1- 2-punch chicken salad

1 can of chicken breast, drained
2 tbl mayonnaise
1 tbl dijon mustard
Dill or sweet relish, to taste (I use two chopped whole dill pickles)
1 tbl flax meal
1 tbl coconut oil, melted

Mix it all together; adjust ingredients as desired, to taste.

Voila! The same amount of fiber as 3/4 c of oatmeal and all the benefits of coconut oil. The coconut oil gives it a light, tropical taste, and one modification I often make is to throw in some curry powder for a Thai twist.

That sounds great -- especially with the curry. I have 'red curry powder' -- is this what you use, or something else? Apparently there is green and yellow too. Do I need to do something else with the curry (make it a paste somehow or something) first?

How fun. I didnt know curry came in different colors other than yellow untill a few years ago.
If you use the powdered stuff you need to fry it off first to get out the flavors. At least if you make a sauce with it. Put butter in a pan, wait till golden and then add curry. Allow to sizzle for a bit and then add your other ingredients

Sounds nummy, I don't experiment with curry alot. You could also add a chopped HB egg in there for extra protein and filler.
