Large griddle that spans 2 burners - cooks perfect bacon, sausage, lc pancakes, etc...
I've been thinking of investing in some type of food processor. I had one, but never used it and sold it at a yard sale 5/6 years ago Now, I'd like to make my own almond flour and have a way to make my own marinades / rubs for meat

Burr grinder for my flax seeds.
Silicone baking pan for baking my flax muffins - they look like biscotti

George Foreman and grill/griddle pan that covers 2 burners. Makes quick, succulent meat dishes. Of course if you have a yard (I do not) a gas grill is wonderful. If you want to make frittatas, an enameled cast iron skillet.

I have been lusting over the idea of an enameled cast iron skillet forever. Do you find yours easy to clean up? I am horrible at keeping cast iron seasoned well.

A large electric griddle I can fit a package of bacon on there,
Food processor for making chicken salad, My egg slicer for slicing my boiled eggs to put on my salads.
Cutco Cheese knife, works so much better than those store bought wire cheese slicers.

I second the crock pot. I make a batch of food in the crock pot on the weekend and then divide into plastic containers and have my lunches to bring to work for the whole week. It's a godsend for those who are super lazy cooks, like me!

My food processor (cauli rice, cauli mash, rutabaga mash etc) and my Kitchenaid mixer (egg whites, more egg whites, occasional low carb baked good, oh! and egg whites!)

As well as my food processor, stick blender and crockpot I would hate to be without my egg boiler, which lets me hard boil up to 7 eggs while attending to other cooking and lets me know when they are done.

I actually haven't used my crock pot since Thanksgiving.

I use my processor frequently- nut bread and mayo. And my stand mixer- mayo and cookies, egg whites, mousse, etc. Magic bullet for the occasional smoothie.

I rarely use the cast iron, outside of frying chicken - but have had ours for over 10 years and only 'seasoned' it prior to the first use. Its in perfect condition.

Also - I second the outdoor grill / George Foreman as an LC necessity I had to go 6 weeks without a grill recently, and while I found a couple oven dishes I really enjoy, was VERY happy to get a new one on the porch last weekend.

I put my Forman type grill away and use my cast iron frying pan and dutch oven almost exclusively. I rarely use my crock pot now that I discovered the cast iron version.
I love my Magic Bullet type blender for making whipped cream, quickly whirling up egg mix for omelets or quiche, chopping veggies for salsa, grinding nuts and mixing shakes. I make a chocolate whipped cream in it thats tastes alot like chocolate soft serve..yummy.
