Default I just made Nachos!

Let me first start with saying "I hate pork rinds" always have....but they're crispy, crunchy and satisfy the "chip" need.

But I couldn't stand the taste - so I tried something....

On a paper plate I put on a spread of the rinds, shredded 2 ounces of cheese - then melted it all in the microwave!

When they came out - and I let them sit for a minute, I put on 2 TBSP of La Vicotria Salsa and 2TSP of sour cream

YUM.....well........at least it makes the right sound, and covers the taste of the pork rind with all the goop on them!

I figured this snack to be apprx 4 carbs - for the cheese and salsa & sour cream

Anybody else have any ideas for "crunchy" - besides veggies

I've been doing the nacho rinds for a while now....they can be addictive. I also do the pepperoni. Have you tried cheese chips? Your favorite cheese, thinly sliced of shredded and put on a microwave safe plate, zap for about a minute (have to experiment with your microwave) then lift off plate with a table knife. Or the american cheese slices, break in half and layer one over the other, zap for about a minute....these are bigger than the other cheese chips...more like a giant cheese cracker.

I like the TOSTITOS EDGE™ Restaurant Style Tortilla Chips. The 6 carbs add up fast but I love the crunch. With some cheese on those bad boys - man!

I also put a LaTortilla tortilla in the oven (400 degrees 20 minutes) with some spray oil and that got kinda crunchy.
