Hi MumTum, and welcome.

2. Whether or not soft cheeses are okay to eat depends largely on the plan you are following. If your trainer hasn't given you any more guidance than "low carb" you might find it helpful to follow a written plan such as Atkins, Protein Power, Barry Groves (from the UK ) etc. If you click on Plans on the green bar at the top of the page, you will find summaries of some of the more well known plans.
Having said that, most cheese is okay carb wise. Just read those labels.
