Menu: Phase 1.5

B: quater cup of oatmeal swith semi skimmed milk and splenda, glass of v8
S: LF cheese string
L: Salmon with salad
S: cherry tomatoes
D: chilli with veggies

Water 125 floz
2 cups of tea

my menu today

b-1 flax WAFFLE ,with mixed fruit, S/F syrup and milk for tea
sn-cheese slice
l-green salad with cheese and tomto slices
sn-1c yogurt
d-Eggplant Feta Melt[greek recipe] on diced tomatoes,w) m/s beef strips
des-berries with topping.

80 oz water 30 m of biking

Hi Pam

Greek Eggplant Feta Melt

6 thin eggplant slices(about 1/4 " thick)
1 tb olive oil[devided]
1 tb Tahini[sesame paste]
1 med.Tomato[cut into 6(1/4" thick)slices
2 oz Feta cheese,crumbled
1/2 ts oregano
14 ts pepper

On a nonstick baking sheet arrange eggplant slices in a single layer and using a pastry brush,lightly brush1/2 ts olive oil over top of eggplant slices. Broil 5-6 inces from heat until eggplant is lightly browned[2-3 mins] Using a spatula,turn eggplant slices over and brush the remaining oil. Broil until lightly brwon 2-3 mins.

Spread 1/2 tsp tanini sauce over each eggplant,than top with 1 tomato slice.Broil until tomato is heated though[1 min] Top each with1/6 of the feta cheese,than sprinkle with oregano & pepper. Broil until cheese is melted & light browned[1-2 mins] Makes two[2] servings.
