Trout is a light, mild fish -- good for summer. In addition, farm-raised trout, which don't pose the same
environmental risks as wild-caught, are readily available. If you can buy them filleted and butterflied, they cook under a broiler or on a grill (make sure to either oil the grill, or cook on aluminum foil) in about five minutes.
The right seasoning blend is key to making this a main dish to savor. Everyone's taste buds are unique, of course, but here's my favorite (per whole, butterflied fillet):
melted butter, 2 tsp.
dill weed, light layer
red curry powder, light layer
white pepper, light layer
fresh lemon juice, 2 tsp.
I apply the melted butter first, then let it sit for a minute. Then I add the lemon juice, and then the dry seasonings.
A suggested summer side dish is a
marinated kale salad.
