Default Cheese Cake is this one legal??

Crust
1/4 cup Soy Flour
1 cup Almond Flour
¼ cup Splenda (sugar substitute)
¼ cup Butter (melted)

Mix flours and splenda together well.
Pour melted butter over mixture and blend throughly with fork.
Mixture should be crumbly.
Press into a 9inch Pie pan by hand.
Bake at 350 F for 10 minutes let cool.

Filling

Philadelphia Brand Cream Cheese Soften (1 package)
2 cups Whipped Cream. (1 cup liquid whipping cream)
¼ cup Splenda

Beat Whipping Cream until it forms peaks. Set aside.
Mix soften Cream Cheese and Splenda with Hand Mixer on Med. until throughly blended.
Add Whipping Cream to the Cream Cheese mixture. Blend well.

Pour Filling into Cooled Pie Crust.
Place in fridge and let set. At least 2 hours.

Topping **

1 1/2 cup *Frozen Sugar Free Strawberries.
(I freeze Fresh Picked Strawberries in June, so I have lots on hand)
(If you let the strawberries thaw use the juice as well)
½ cup water
½ cup of Splenda
1 envelope of Unflavoured Gelatin (Knox is what I used)

Bring strawberries, water and splenda to a boil
Add Gelatin.
Stir well.
Pour into a bowl and let set in fridge.

Topping takes a bit to set.

This pie tastes too good to be legal on Atkins. And VERY filling!

I may be looking in the wrong place for the soy flour and almond flour carb counts so not sure of the total carbs of this cheese cake. I am guessing this cake is around 80 carbs total, but an accurate count would be wonderful.

Can anyone help!!

* NOTE: I put frozen strawberries in a pan with the water and continued to bring to a boil.
** You can substitute any fruit **



This Filling has been used in my family for years it is very simple and very good. I did substitute regular sugar with the splenda and you can't taste a difference to the original.

Hoping this cheese cake is legal!!

Splenda has 24 grams of carbs per cup and the counts for all the rest of the ingredients can be found above in Low Carb Tools.

Hi Karen.

Thank you for sharing the carb count in a cup of Splenda!

I think I will take this cheese cake back to the kitchen and retry with lower carbs.

Not as high as a regular cheese cake but certainly higher then I would want to have at this time of the program.

If my calculations were correct this cheese cake is just over 93 carbs total.

Will re work it to get the carbs down and resubmit, with carbs included!

Being new to this forum I am learning alot!!
