Default Awesome Brisket

This was my first time making brisket. I found several recipes and combined them to make the following. It turned out very tender and flavorful. Yum!

1 large beef brisket
onion, 2 stalks celery
one can lite beer
one cup broth
1/2 cup coffee
bay leaf
1/2 T thyme
1 t. splenda
2 T. dijon mustard
salt, pepper

Sear meat in oil. Remove and place in large baking dish. Cook onions and celery in oil for several minutes. Add beer, broth and coffee - bring to boil. Add spices, pour over meat,tightly cover and bake. 325, 2.5 hours.

I am so bad at cooking brisket and roasts. How do you get it so tender? How do you cut it, along the grain or against? I can't remember and ALWAYS screw it up. The recipe does look great!

I read somewhere that you cut it against the grain. As for me, I just sliced it up and didn't pay any attention.

I think it is the acidity of the coffee that tenderizes it. I, too, have had bad luck with dry roasts but this didn't dry out at all.

A friend of mine uses tomato juice which is acidic to tenderize turkey. I use lemon juice and soy sauce for my pork roasts and ribs. I always try to cut across the grain of meats before they are served-- cutting with the grain can make it stringy or tough.

Ill have to try your recipe when brisket goes on sale, it seems I always eat pork these days-- as fatty a cut as I can find.

Your recipe only uses one can of beer. What do you do with the rest of the six pack?

Actually I used a can of chicken broth because I didn't have beef. I often use them interchangeably. I can't tell that it makes a big difference.
