Default Butter question

Assuming butter has never been opened and has remained refrigerated, but never frozen, how long past it’s sell-by date will it last before spoiling?

How much butter are we talking about? Why not toss it if any question - we're talking a few bucks per pound here. Or are you planning on storing some for extended period?

The short answer is taste it and see.

I have discovered a forgotten pack of butter in my fridge in the past. I found that the outside "layer" was quite rancid, but once i cut the darker areas away, it tasted just fine. I am too budget conscious/mean to throw good butter away. Assuming I've tasted it to be sure it is good of course.

Yes, that’s what happened. Found a package of Kerry Gold Irish butter in the fridge. That’s what happens when it does not get put away in the proper spot. Having been through the poorhouse, I don’t really want to throw it away if I don’t have to.

I’ll take a looksee and the next day or so and see how rancid it is.

I tend to agree with Rosebud .. waste not, want not. I'd cut away the darkened layer plus an extra half-inch just to be safe. Then taste. If the "stinky cheese" taste/smell has gone through the whole block .. toss it.

The thing with rancid fat/oil is that "rancid" means the fatty acids have oxidized. Oxidized fats (and also oxidized cholesterol) are bad news for health as well as your nose. In the case of butter, the main fatty acid .. butyric acid or butyrate .. will develop the tell-tale stinky cheese odour when it becomes oxidized. So even if it looks okay, if it smells cheesy .. it's done for.
