Default Chocolate Cupcakes [non dairy, non-granular splenda]

Preheat oven to 350.

In a bowl, mix the following ingredients:

1 cup torani (or davinci) SF Vanilla Syrup
2 1/2 tsp clear liquid stevia (if you're not using 'stevia clear', see this chart for proper amount http://www.cookingwithstevia.com/st...sion_chart.html )
1 3/4 cup almond flour
3/4 cup cocoa powder
2 tsp baking soda
1/4 tsp salt
1 cup coconut milk (trader joe's light coconut milk has 3 carbs/cup and is only coconut milk and water)
2 eggs
1/2 cup coconut oil

Mix well. It will be liquidy - that's ok! Pour into lined muffin tin (otherwise they get stuck... trust me!) Bake at 350 for about 25-30 minutes. They take a smidge longer than regular cupcakes because of the liquid sweetener, so they're done when you stick a fork tine in them and it comes out clean... it might be a little longer than the time I quoted here, just keep checking them about every 5 minutes after you hit the 20 minute mark.

I promise, they taste like chocolate, not coconut

I have been debating making this bc I feel I will eat it all. I am going to find a frosting for these.
