Lightbulb "Roasted Zucchini Fries"

3 Large zucchini~ washed and patted dry.
1/4 cup of olive oil
variety of spices: tsp garlic powder, tsp onion powder, 1/2 tsp salt/pepper
tsp cumin, tsp oregano, chopped fresh rosemary (whatever your spice desires are)

preheat oven to 500 degrees.
take cookie sheet and rub thin coat of olive oil on surface.
In a bowl throw all of your favorite spices to combine.
take the zucchini and cut in half length wise. cut the flesh out where the seeds are. discard this flesh.
slice zucchini into shoe string style slivers. like french fries.
put zucchini in bowl with spices and gently toss without breaking shoe strings.
drizzle oil and toss to coat with spices and oil.
Lay zucchini on cookie sheet, in one layer.
bake in 500 degree temp oven for 15-18 minutes until crisp.
take out and eat like french fries.

These are still the best way i like zucchini.

i like salty crunchy foods. this fits the bill.

I've made these with both lc ketchup and lc tomato sauce w/ parmasean cheese as a dip. Both are deeelish!

I make close to the same hting in the summer on a grill. I toss the zucchini wedges with olive oil and herbs, then grill. It comes out tasting great and when you poke it with a fork all the nice juices well out.

how many carbs in zucchini?

I have seen these enormous ones at veggies stands but had no idea what to do with them. this sounds like an awesome recipe I would like to try.

Just need a carb count...*grin*

Default excellent zucchini

I have a recipe that calls for 4 cups of chopped zucchini, 4 cloves of garlic- minced, olive oil and parmesan cheese. Just fry the zucchini in the oil with the crushed garlic until browned and tender. Remove from pan and plate it. Sprinkle with crushed black pepper and grated parmesan cheese. Awesome!!! I eat it every summer when the zucchini are large and people are giving them away!

I just found online:

squash, zucchini, with skin, raw
4.6 oz per cup
1.891 grams carbs
.782 grams fiber
1.109 net carbs

Not sure if they are referring to zucchini squash, or zucchini squash and regular zucchini. There is a difference, right?

Has anyone tried this recipe with turnips? Atkins has a recipe with turnip fries, but without any parmesan cheese. They are very good! Only 2.5 net grams of carbs per serving, using 4 turnips with 6 servings.

I know what I'm having for dinner tonight.

I had thought there would be a difference between zuchini and squash, as well.

mind you, I've never been a whiz in the kitchen so I can hardly claim to be an expert...

Zucchini is a type of squash - summer squash, to be specific. Winter squash (acorn, spaghetti, pumpkin) are different... generally higher in carbs.

This is a super recipe.
the more you toss, and make sure they are roasting, the crispier they will be.
I don't like the frying idea, cuz i hate the smell of fried foods in my condo.

i love to do this on a grill, when a grill is available. you can also do this in a george forman grill.

and the more spices you love, go for it!!!!!!

have you checked out my fried green tomato recipe yet?

Do they get really crunchy?? I too have been wanting some french fries. I made turnip fries but they get mushy. I want the crunch of french fries!!!!!

You could also make a dipping sauce for them using mayo, LC ketchup, and some seasonings (my fav are minced garlic & chopped basil).
