In the US anything with less than 1g carbs per serving can legally be called 0 carbs, so the serving size is often adjusted so that they can legally call it 0 carbs on the label. Also, the USDA does not require that every brand be analyzed for nutrition content, they can legally use data for a "similar" product that has already been analyzed.
Eggs do have carbs, 0.6-0.8g each, depending on size. Bacon too, if sugar is used for curing (check the ingredients). Typical commercial bacon has 0.1673g carbs per ounce of cooked, drained bacon (or 0.587g carbs per 100g cooked, drained bacon). So not a lot of carbs, but if you were Edith the Egg Lady, they could add up, especially on Induction.
