Lightbulb Creamy Egg Dip!

Hey folks,

I just experienced a "happy accident" ... you know where things turn out totally different than what you planned, but the results are pleasantly surprising and wonderful??

I was making some egg salad, and tossed the hard cooked eggs into the food processor to chop ... I guess I wasn't paying attention ... ened up puréeing the darn things. So, I added a blob of mayonnaise, some horseradish, cayenne and snips of fresh dill, and some dill pickle juice. Whipped it up nice and creamy ... Yummers! Now, I'm sure this is already a recipe somewhere, but I just wanted to share ... for some of you who may be looking for a creamy lowcarb dip for veggies or pork rinds, and want to avoid a lot of dairy fat from sour cream or cream cheese ... this certainly would fill the bill.

Right now, I'm having it with strips of sweet red pepper, celery and daikon.

Hmm... I would be very tempted to throw a can of tuna in with the next batch!

Not the whole can! Just the tuna. Bad for the food processor!
