Default Dr Davis's chocolate brownies

These look so good, for people who can consume caffeine.

The recipe is here:

http://www.wheatbellyblog.com/2012/...alnut-brownies/

Using a zero carb sweetener, if the recipe is divided into 16 portions, the counts are:

11g carbs 7g protein 24g fat 6g fiber 260 calories

I know in my country you can buy decaf instant coffee. I wonder if you could find a coffee extract or flavoring without the caffeine?

They do look great and they're dairy free too! Yay!

I'm going to make those with the kids this afternoon. If they turn out good I'll make a second batch to bring for dessert at my sister's this weekend.

Also, just thought I'd mention that I try to copy the recipe into the post after giving the link and proper credit. Sometimes stuff gets shuffled around or deleted on the original website so the links don't always work. This way we never "lose" the recipe.

So I tried them. Some of the kids like them, some don't. They are kind of gritty using the almond flour and I had to add lots more coconut milk to them. Maybe I should have added more? I think they may work well with pumpkin purée added to them to get more of a soft brownie texture to it. Also, I used a touch of stevia and some liquid Splenda but I really can't get over the after taste of stevia no matter how hard I try, but that's just a personal preference.

As a bonus, I think this would make an absolutely wonderful crust for cheesecake. It would probably taste good mixing cooked chunks into SF ice cream like a blizzard or cookie flavored ice cream.

Thanks for that feedback, Amanda.. We can buy ground almonds here which are very smooth, so I'd probably use those. To be honest, I hate the cloying texture and the flavour of normal brownies, and that's why this recipe appealed to me - it should probably be called something different, such as healthy chocolate & walnut bites, so people aren't expecting the moist brownie experience.

My boyfriend hates stevia and won't touch anything containing it, but I only use a teeny bit in anything for myself alone - just to take away bitterness, so it's not terribly noticeable. I guess any sweetener could be used. However, I am not ready to go back down the caffeine path.. I am just so "over" the all-consuming cravings.

Amanda, the grittiness most likely was coming from the erythritol. I get that result if I don't powder it first. You might try powdered instead of granular next time. I just run mine through the food processor a couple minutes. You have to wait and let the "dust" settle before opening the processor and breathing in though. LOL
