Default Atkins Cajun Pork Chops are excellent!

I had some pork loin left over so I made some thin Cajun Chops using the atkins recipe here:

I brushed melted Coconut oil on them to get the spices to stick and baked them at 375 for 15 minutes.

I had a Spinach/blue cheese/hb egg salad with them.

I found a really good salad dressing recipe:

1/2 C mayo
1 tbsp white vinegar
1.5 tsp of splenda
1/2 tsp sesame oil
Mix up well and thin with water to desired consistency.

I like the combo of herbs for pork.
1 tbsp Paprika
1/2 tsp Cumin
1/2 tsp Sage (Ground)
1/2 tsp Black Pepper
1/2 tsp Garlic Powder
1/2 tsp Red or Cayenne Pepper
