Default ***Incredible Banana Bread-LoCarb-LoFat

Notes: I hate health food, but this tastes wonderful.
Ratio:
50% protein, 30% carb, 20% fat
Entire loaf is 1,100 calories.
One thick slice of the soy banana bread has 106 calories, 2 gm fat, 9.5 gm carb, 11 gm protein and zero sugar. High in potassium and 10% iron.
*To cut fat content in half use, GNC Soy Flour instead of Atkins.

Soy Banana Bread Recipe

Mix dry ingredients:

1-1/4 cp Atkins Bake Mix (Soy Flour mix) or GNC Soy Flour Bake Mix
1/2 cp oats ground in a blender (or substitute 1/4 cp more Soy Bake Mix)
2-1/4 tsp baking powder
1/2 tsp salt
3/4 cp Splenda (sugar substitute, 0 cal 0 carb--only use Splenda--sucralose)

Add to dry ingredients:

4 egg whites (1 container Egg Beaters Egg Whites--new product--not regular Egg Beaters)
1/2 cup water
1 tsp vanilla
2 med bananas starting to get brown spots

Beat with an electric mixer. If too dry add more water until creamy but still thick batter. Spray a couple shots of Baker's non-stick spray into batter (0 fat, 0 cal).

Stir in 3 whole walnuts, crushed.

Bake in a bread pan with Baker's non-stick spray or line the tin with tin foil or baking paper. Bake for 45 minutes at 350 degrees.

Makes small loaf of 10 thick slices.

Thanks for posting the recipe.

Did you know that Splenda does contain carbohydrates? There are 26 grams of carbohydrate and 106 calories per cup which come from the maltodextrin that is used as a filler to make it pourable.

Default Use liquid form of sucralose

Karen, you are right. Replace powder form of sucralose in recipe with liquid sucralose. It should taste the same. I'll test it soon.

Be forewarned, however, that both the packets and granular have maltodextrin and / or dextrose as a 'filler' to increase the bulk of the sucralose, so that it can be measured the same as sugar (i.e., 1 cup granular Splenda = 1 cup sugar). And the maltodextrin filler has carbohydrates: .5g per teaspoon, 24g to a cup.

The packets of Splenda do not measure out the same as table sugar. Each packet is equivalent in sweetness to 2 tsp of sugar. The packets have 1g of dextrose per packet with a small amount of Maltodextrin; each packet = 1 carb.
This information was confirmed with the manufacturer.

Default Powder form adds 2 gm carb

If using the powder form of Splenda, add 2 gm carbs and 8 calories per slice of Soy Banana Bread recipe. It's all good.
