last time i ordered beef it lasted 2 years. it is packaged to last that long. i cannot eat those huge amts so...
i could've ordered 1/4 but i like cuts from both front and hind. HOWEVER, since i don't like long cooked meat, i have decided to have the butcher give me ground and steak, period!! so it's just a matter of which steaks i want. most would say ribeye so the front but this beef had the best sirloin i've ever eaten. and, of course, the hind provides more meat so it'll get me through a year.
they will also give me all the organs that no one else want so i get lots of liver and tongue....

I hope you're getting heart too.

Do they give you the feet? I've been trying to get grass-fed cow's feet and they keep telling me I can't. The last folks I talked to said it was because of "the FDA." That doesn't make any sense. I can get corn-fed cow's feet from the butcher no problem. What's the deal?

I don't even bother trying to get brains or eyes...

yes, plenty of heart.
i saw trotters yesterday at the grocery and a good price. i've wanted to try them but cannot stand too much fat. maybe i'll try some anyway since 1.49 is not so much to waste....anyway, i have a dog.

Beef or pork trotters?

I think they have more cartilage than fat. There's the skin, but I don't really think of that as fat. I want beef feet for making stock. I do eat the pig's feet, but I boil them first. Depending on how much you boil them, they can be tough and chewy or completely falling apart. If they're falling apart, it's easy to remove the bones, and you can pick at the meat more easily. You can fry or confit them afterwards to get them to crisp up, and then you won't have any mushy fat. Pig's feet also make a great broth; I save it and use it to make sauce for my pork chops.

Thanks for the sauce ideas! I love thyme and sage!

Today my wife bought me a rotisserie chicken. I reheated it up with some duck fat on my Iron skillet. here is the weird thing. as it was my only meal of the day I thought I would be able to eat the whole thing. I ate the wings, on thigh and started on the rest it was so lean and dry I could not get it down! so I switched to a 1/4lb GB patty and was stuffed. I could have sworn I would be able to eat the whole chicken! am I a whimp?

I just realized I can eat shrimp scampi with real butter! finally without guilt! yay!

i have found that peel & eat shrimp served with melted butter is an easy meal when dining out with friends..
just like naked chix wings w/ sauce are a good meal.
there's not too many options for us when dining out.
(besides beef)

most places do have those things.. and they are pricier than eating chix wings and peel & eat shrimp out in public. (considering it takes volume for us to be satisfied and a 6 ounce burger just doesn't cut it)
it's hard to pay $30 for a steak out when it costs you $7 at home.

I never mind paying for a steak when I eat out - they do it well and you're also renting a table and service. Last time I was out, I noticed that the 22oz steak was only $1 more than the 14oz steak. What a deal!
