Default recipe for flax meal and wheat bran muffins?

i'm in need of help from some bake-savvy folks. i'd like to try making flax seed muffins, because i'm sick of eating ground flax with water, and was wondering if anyone had a good recipe for muffins or something. i'd like to include wheat bran in the recipe as well. and it would have to be a very simple recipe, as i am cooking/baking impaired. (i've never made muffins before in my life).

i looked at some of the other flax muffin recipes, but i don't have enough cooking knowledge to knowhow to tweak a recipe to incorporate wheat bran. and i have no clue what wheat powder or maple extract is. once it gets past 5 ingredients, i'm lost *l*.

would anyone be able to suggest a simple modified flax/wheat bran recipe?

Hi,
I don't know of you have tried this recepie it's kind of a bread and it's very easy to make. You melt 25 g butter (I use a little bit more) in a microwavesafe container then you mix in 50g almond meal, 50g flaxseed (broken or ground) and some tbsp wheat bran and a tsp baking powder and mix in 2 eggs. (You can add a few drops of sweetner or flavor if you like) If the mixture is to dry just put a little bit of cream in it. You put the container in the microwave for 2.5 minutes and voilà a nice little bread with lots of fibre. I like it alot as breakfast or when I am in a hurry I just take a piece of it, put some cheese, meat or SF jam on it. Let me know if you tried it and if you liked it.

What a fantastic discovery your recipe has been for me, Sooike - I tried making your microwave bread for the first time just now, and it was fabulous: I just had a sandwich for the first time in about 3 months! Thank you so much; I am a complete catastrophe in the kitchen, and have never in my whole life tried a bread recipe that "turned out" until now. It was so quick (maybe 15 minutes from grinding the nuts [i left out the flaxseed, since I had none in the house] to finished bread); also, since I live alone, the portion size seems to be perfect - just enough for a 'treat' if I feel like it.

Hooray, and thanks again for the great contribution!

I cut the bread in pieces and dip them in my soft boiled egg. mmm
I don't like the flax cereal that much and this way I get alot of fiber.
If you really want a nice treat you can put cacao and some berries in it and you have a nice cake. Topping it with sweetend creeam cheese or whipped cream : yummie !

I ran it through Fitday and came up with the following for the total recipe:

514 calories
36 grams fat
20 carbs
14 grams fiber
29 grams protein

I made this yesterday, for the first time, and it was great!!

I just recently made this recipe over the weekend, and I added a few packets of splenda, and a handful of frozen cranberries... it was quite nice. I made it in a glass 8 x 8 inch casseole dish and microwaved it on different settings until I got the firmness I desired.. Very good recipe, thank you so much!!!

Got this one somewhere...


Flaxmeal Muffins

dry
===
2c flaxmeal (I use Bob's Red Mill)
1c nuts/etc. *
1/2c Splenda (box, not packets)
1tsp baking powder
1tsp baking soda

*i usually use chopped almonds or pecans (can't remember which right now!) that net out at like 1ca per 1/4c - take a look, you'll find them! i also sometimes will mix 1/2c nuts with 1/2c unsweetened coconut (also lc!). get creative here!!!

wet
===
5 eggs (beaten) (I also tried 3 eggs and 1/4 C plain yogurt)
8T sf syrup w/Splenda **
5T vegetable oil (i use canola) or Butter

**so far i've tried hazelnut or banana, depending on what i use above for nuts/etc.

pre-heat oven to 350F

mix together all dry ingredients in a bowl, then in a separate bowl, mix all wet ingredients. fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!).

immediately transfer batter to Pam/etc-sprayed 9x9 pan

bake at 350F for 35min. or until it passes the knife/toothpick/etc. test.

remove from pan immediately and cool before slicing (I make 9 "muffins"

store these in tupperware/rubbermaid in the refrigerator - they keep just fine for the 8 days that i have them around.

I got this recipe off this forum somewhere..they tast great..about 1 carb per muffin i think, cos' they're loaded with fibre.
I've also made them and added 1/2 c whaet bran to mix..they're delish!!


Low Carb Flax Seed Muffins

6 T butter - melted
3 large eggs
¼ cup whipping cream (or half and half)
Beat these 3 ingredients together, and then add:
½ cup Splenda (artificial sweetener)
1 T maple flavoring
1 T vanilla
Mix the following together and add to the above:
2 t cinnamon
1 t nutmeg
½ rounded t baking powder
½ rounded t baking soda
1 cup ground flaxseeds
¼ cup soy flour or Atkin's Bake Mix
4 oz black walnuts, chopped (optional)
Put into 12 paper cupcake liners in a muffin tin and bake at 375 degrees for 15-20 minutes. You can also double the recipe and get 18-20 larger size muffins.
These have been recommended as "very good with lots of fiber". About 4 carb per muffin but over 3 is in the form of fiber. Other flavorings have been tried - banana, pineapple or unsweetened coconut also taste great. These muffins freeze well, too.

These can also be made in the microwave. In a 1000 watt microwave, 12 muffins take about 2 minutes and 10 seconds.

Give them a go!

It's always cool to see old threads revived.

Here's a recipe for flax and bran muffins. To replace the combination of Splenda and Sugar Twin, use 3/4 cup of Splenda alone. A 300 gr package of soft tofu = 10.5 oz.
