What is a Paleonola? Sounds good. And pumpkin coconut nog- YUM. How do you make that?
[/QUOTE]
Paleonola is a brand of grain free granola- I find it in whole.foods, but you could make it much cheaper. For me, it's an occasional treat, so I just buy it. It is just nuts, seeds, coconut flakes and flavoring (like cocoa or vanilla or.cinnamon). It has 4-5 carbs after fiber per serving
For pumpkin nog, I use 1/2 c pumpkin, 1 cup coconut milk, 1/4c eggbeater for protein (eggbeaters are pasteurized so safe "raw", cinnamon, vanilla, splenda and a touch salt. I blend it up with ice if it's hot out for a cappuccino type drink, or microwave, stirring every 30 seconds until hot. It takes about 2-2.5 minutes.
Went out today for before a Dr's appointment with my mom.
Went to a salad bar place where you pick ingredients and they chop it all up for you (cabbage and arugala, hearts of palm, cuke/tomato salad, edamame, celery, shrimp and a lemon garlic dressing. It was great. Also had a passion fruit la croix.
Snacks- epic turkey strip, salt and vinegar pumpkin seeds, a chai almond milk iced latte, and a peach pear sparkling water.
