Lightbulb Chicken Tenders anyone?

Low Carb Chicken Tenders

Preheat oven 425
4 Chicken Breasts
(remove skin)
Slice into strips (lengthwise roughly 1/3 inch)
Place on lightly greased pan (I use pam)
Bake for 20 minutes
Remove and pat dry with paper towels

In food Processor
Combine
1 small handful of crushed salted peanuts
2 low carb tortillas
1 1/2 cup lightly crushed pork rinds
1 T. Paprika
3 T. Creole or Cajun seasoning
1 t. black pepper
(NO Salt. Plenty of salt in the pork rinds, peanuts, and Cajon or Creole seasoning)
Make into fine powder in food processor.
Recommend you only do 1/4 of this batter at a time in container so that It sticks without clumping up.
Place in container to roll chicken in.

2 eggs whisked in separate container.

Pan with lots of oil to medium/low heat

Take almost cooked chicken, dip it in egg then roll in batter

Fry in pan for 5 minutes or till golden/dark brown
Flip and repeat

So wonderful you'll swear it's the real thing
this batter rules
