My husband invented a faux-Malaysian chicken dish with coating. It's basically ground almonds mixed with Keto crumbs. You fry it slowly at a lower temp to avoid burning the coating.

Also, try pork rinds. I haven't tried them on chicken yet, but I hear they're great. They're WONDERFUL on pork.

Dry grated parmesan cheese.

Most people use a combination of parm cheese, crushed pork rinds, and/or soy flour.

I use dry parmesan cheese and Hidden Valley Ranch dressing mix. My family loves it on fish fillets and deep fried. Everytime I have used crushed pork rinds in my deep fryer I have had a foamed up overflowing MESS.
