Default Chocolate Bars from Karen's Book

Hi Karen,

I've been working on the chocolate bar recipe from your book p.258 (LOVE the book, BTW). I'm in Vancouver, and am wondering if you can help out with places to get the ingredients.

I found cocoa butter at Charlie's Chocolate Factory on Kingsway, but when I tried to get unsweetened chocolate there, they didn't seem to understand what I meant. (They sell Callebaut there, and pointed me to the bittersweet, but it still has sugar and I was fairly sure that wasn't what I want.) They sold me "Cocoa Liquor" which is a hard-bar format, and the only ingredient listed on it is "cocoa mass".. is this the same as unsweetened chocolate, and if not, can you suggest where in Vancouver I could get some?

When I buy Baker's unsweetened chocolate from the grocery store, the ingredients on the side says "Unsweetened Chocolate" not the "cocoa mass" that the Cocoa Liquor says.. but you recommend not using a supermarket brand. Help!

I did try the Purdy's factory store, but they didn't have cocoa butter, let alone quality unsweetened chocolate.

I hate maltitol (and try to avoid the commercial sugar-free bars with it) and am looking forward to getting a bar-like result from your recipe of Splenda and Canadian Sugar Twin, and possibly trying your recipe with Xylitol.

OH, and I gotta say, I'm addicted to your recipe for Keema (spiced ground beef) -- 12 spices to measure out, but sooo worth it!! (Did I mention I love your book!! The side-bar tips n' tricks and chapter intros are fabulous!)

Hi, I'm not Karen, but she may be away or something...

Anyway, the cocoa 'liquor' is definitely the chocolate without the sugars and sweeteners.

I'd LOVE to find some of that stuff over here in Victoria. Hard to find, so hang on to your source.

What's the address of that place? And do you have a brand name for the stuff? Love to have some the next time I get my backside to Vancouver...

It's 1/2 block on the Burnaby side of Boundary Road (Boundary divides Vancouver from Burnaby).

There's no name brand for it, as it's hand packaged by them at the factory. It's $2 for 42g / 1.5 oz of Cocoa Liquor.

Their Cocoa Butter (same size) is $1.50 I think.

Maybe we'll have to do a swap for some of the stuff at your store, islandgirl, heh! Loved my last order with the carbquik..

Ha, it's you! Didn't realize!

Hmmmm, just might have an idea there...hope you enjoy your chocolate experiments...I'm just trying out a tweaked version of KevinPA's refrigerator cookie, but using the Lindt 85% (which is pretty darn good, actually).

I've tried the recipe with Xylitol and it works just fine! We have the Westside Market here in Cleveland (I live the Delta Quadrant of northcentral Ohio but get in once in a while) and I can usually find good quality unsweetend chocolate. Don't ask me what I bought last time - I've been out of it for too long. ANYWAY, I use Xylitol because it doesn't have an aftertaste. Give a try and see what you think. Cheers!

However, you might very well enjoy this recipe which uses unsweetened chocolate, sounds absolutely fabulous and which I would LOVE to convert to LC, Chocolate, Pumpkin Seed & Cookie Brittle which is posted by Karen and right on Karen's own personal website karenbarnaby.com and dates back to one of her early cookbooks, Girls Who Dish. Another fab Karen cookbook, though pre-LC.

does anyone know how to source Carre de chocolat from Japan? I've just had the Venezuela Bitter chocolate tablet. It's such a beautiful fruity tasting chocolate, but i have no idea where to get it in Canada.

It appears these are 70% cocoa solids chocolates, which explains a lot about why they are so yummy. I've tried a lot of different kinds of 70% chocolates, and almost all of them are TDF.

BTW, CARRÉ simply means square in french, so this is chocolate squares. Are you sure that's the brand name? I'm running into all kinds of brands of chocolate squares in my searching...

here's more on what i found out. Of course the only wording besides "carre de chocolat venezuela bitter" is in Japanese so i can't read it.

What's the title of this recipe book? I'm wondering if my library might have it (I'm hesitant to buy cookbooks before previewing them because I have so many food allergies.)

I just recived my copy of The Low-Carb Gourmet....

What page is the chocolate bar found on? It is not on page 258 as my book only has 175 pages. Is there another book and I have the wrong one!
