Default Chilled Soups

They are calling for record breaking heat this summer on the East Coast (US) and probably other places, too (it has to do with la nina). When i needed a simple dinner (DF was working late), i saw gazpacho at whole foods and it only had 6 net carbs per cup (it is a locally made brand).
It was delicious and gazpacho is a favorite thing to order, but i have not made it myself.
Anyone have good recipe?

Also, there was abeet gazpacho with 6 carbs, i will try next!

then i thought, hmmmm. what a cucumber gazpacho?

here is an old atkins recipe for a "smoothie" i love with avo, chives, and goat cheese that could easily be served in a bowl as a soup:
https://www.atkins.com/recipes/avoc...o-smoothie/1283

any other chilled soups? i loved one with melon and yogurt in college, i bet i could reduce carbs with greek yogurt or even cubes of frozen coconut milk....i think it had mint and crushed red pepper- will have to try and find my old recipe for a splurge recipe.....

Vichysoisse with cauliflower instead of potato. Here's one recipe. I think I used a different one, but any recipe should work.
