Default "Buck Wheat" Pancake

I made this recipe for breakfast and was amazed at how much it came out like a buckwheat pancake. It made a large pancake that puffed up like a regular pancake would, and smelled great cooking. It wasn't until after I tried putting the recipe into fitday that I realized my hemp protein already had the fiber subtracted from the carb count. Those on induction might want to avoid it, while those wanting to increase Omegas in their diet should include it.

Omega Rich
High Fiber
Candida Safe
Dairy Free
Gluten Free
Induction Safe (minus hemp protein)

2 eggs
2 Tbsp Flax Mill
2 Tbsp Psyllium husks
1 Tbsp Cinnamon
2 packets Stevia with FOS
2 Tbsp Hemp Protien
Water enough to make a thin batter
1 Tbsp coconut oil for frying in
1 Tbsp Smart Balance Light for topping

Beat eggs in a small bowl. Add all ingredients except coconut oil. Heat oil in a fry pan over medium heat. Poor entire contents of bowl in for one large pancake, or you can scoop batter to make dollar pancakes. I topped mine with Smart Balance mixed with Maple extract.
