Cucumber Lassi
This makes a delicious drink for breakfast. It really is a meal for me, because it has sufficient protein and fat. This would not be the case with “regular” plain yogurt. You need to use this brand, or a yogurt with a similar nutritional breakdown. Another brand of plain, Greek style yogurt would also work, if it has enough fat. Accompany this with a hard boiled egg or two if you need more protein.
1 C Fage Yogurt (plain, full fat)
1 small cucumber, peeled and cut into chunks
(I like the Persian cucumbers, available at Trader Joe’s)
1/2 tsp chopped fresh ginger root
1 small clove garlic
dash of salt
1/2 C ice
mint for garnish, if desired.
Crush ice in blender. Add remaining ingredients and blend until smooth. Garnish with mint. Serves 1.
