Default Thin Crust Pizza or Quesadilla

I'm not sure if this was posted somewhere else but I made these in my truck the other day and thought I had gone to heaven! I love, love, love pizza! But the crust has always been a problem to recreate as low carb.

I had some of Mama Lupe's Low Carb Tortillas and thought "why not?"

The recipe:

1 tortilla - 3 net carbs
1 tsp of Walmart/Great Value brand pizza sauce - .25/per teaspoon or 3/per 1/4 cup
1/4 cup of shredded Mozzarella cheese - 1 grm

Spread the pizza sauce in a thin layer on tortilla then add cheese. I don't have an oven so I put it in my 500 Watt microwave for 3 minutes. It's enough to melt the cheese.

I let it set a minute cause I've burnt my mouth on the hot cheese before!

Additional Topping Ideas: Low carb veggies - ie; mushrooms, onion, green pepper, olives or make it a meat lovers with sausage, pepperoni, ham!

I would love to try this in an actual oven. Maybe spray one side of the tortilla with olive oil to get it crisp in the oven.

If you'd rather make it a quesadilla, just fold it in half and put into a small Foreman grill or quesadilla maker.

At only 4.25 grms per tortilla these are even Induction friendly if you're careful.

I know it's kept me out of Pizza Hut a few times!

I do the same thing (actually had it for lunch) but I use Joseph's flax pita bread I pull them apart so it's like 2 pieces instead of a pita. I top with GV sauce, cheese, meats etc and then use my pizzazz (sp) pizza over that rotates & cooks over and under. Very good.

Also, Lickrish. . . About your pizza oven... how big of a pizza will it accommodate?
