Default quick dinner muffins with hamburger

These are great for when you don't have time to cook. Make ahead on the weekend and eat them all week.
1 pound of hamburger (low fat)
1 can of french cut green beans
2 c. of shredded cheddar cheese
muffin tin

Divide the hamburger into 12 muffin cups. Press the hamburger against all the sides and bottom of the muffin cups. Fill inside of hamburger cups with green beans. Add a tablespoon of cheese. Bake at 350 degrees for 30 minutes. Remove from oven and cool. Store in baggies. (or some other container) To heat, microwave for 20 - 30 seconds on high. Great for lunch or quick dinner. Makes 12.

Do you have to cook the meat first or is it raw in the muffin cups?

I think it must be raw, in order to press it against the sides AND to be cooked for 30 minutes.

This would work; quite interesting. Could vary the vegetables and the cheese, too.

Default Cool deviations that are still low carb low GI.

I have tried these meat muffins with a low carb asian slaw using egg beaters as a binder after loading with low GI stir fry items. Kind of like a breakfast asian meat frittata. Also made turkey bacon cheeseburger style with one burger pickle and a tad of mustard with cheddar and a cube of pepper jack. remember to season your meat vigorously with your chosen tastes as these are small items and need to feel big to your brain. thanks for the great idea to piggyback off of.
