Default Crispy Firecracker Chicken - So Easy!

This recipe has a nice crispy outer coating. You'll never know it's not made with flour. You can reduce or leave out the chili flakes for the kids. Be sure to make extra for those evening snacks.


Firecracker Chicken

3-4 Boneless chicken thighs (or 2 breasts), cut into 1 and a half inch strips
1/3 c. grated parmesan cheese (not the canned kind, but fresh from the dairy section in your store)
1-2 TB chili pepper flakes (more or less according to taste)
Egg
Oil

Mix cheese with chili flakes. Lightly beat egg. Dip chicken strips into egg, then coat with cheese/chili flake mixture. Fry on med. high heat for 5-7 minutes or until chicken is no longer pink. Serve plain or with your favorite low carb sauce. It's great with barbque sauce!

I don't know what the carb count is for the dish. Perhaps someone on the forum can post it?

I tried something similar to this about a month ago.. without the chili flakes and adding in a little garlic powder and oregano.. delish! Dipped in 3 cheese ranch dressing YUMMY! DH really loved them.. so much that he wanted my dinner instead of his own!
