If you like buffalo chicken, you'll love this! (I'm a blue cheese lover as well, and it was so dang tasty. If you don't like it, just leave it off.
)
Grilled Buffalo Chicken Bake
4 ounces cream cheese
2 eggs
5 ounces mozzarella
1 pound grilled boneless, skinless chicken breast
1/2 cup louisiana hot sauce
4 Tbs butter, melted
1/2 cup ranch dressing
1-2 stalks celery, thinly sliced
2 ounces crumbled blue cheese (optional)
Grill chicken. Slice into strips or chunks.
Mix together softened cream cheese, eggs, and mozza. Spread in 2 quart oblong dish. Bake at 350 for 35 minutes.
Mix sauce and melted butter together, stir in chicken and marinate while crust is baking, stir often.
Smooth dressing over slightly cooled crust, then the chicken plus marinade, and thinly sliced celery. Bake at 350 for 15 minutes or until bubbly.
Cool slightly and sprinkle with crumbled blue cheese.
