Default Tuna casserole

I was craving tuna noodle casserole something horrible tonight, this is what I came up with. Came out wonderful and definately satisfied the craving.

2 - 12oz cans albacore tuna
1/2 large onion, chopped
1 cup celery, chopped
1/2 cup mayo
1/2 cup sour cream
1 cup grated cheddar cheese
1/4 cup grated parmesan cheese (cheap stuff is good for this)
1 - 2 tsp parsley
1 tsp ground black pepper
Topping: Use and additional 1/4 cup grated cheddar and 1-2 TBLS parmesan mixed together.

Preheat oven to 400. Mix all above ingredients, except topping. Pat into a sprayed 8X8 baking dish. Top with remaining cheese. Bake at 400 for 30-40 minutes.

Makes 6 servings.

I just put the ingredients into fitday and it's roughly 4 carbs a serving (at 6 servings) and 436 calories. You could of course cut those in half probably using low fat mayo, sour cream and cheese. I however have never really restricted calories while doing atkins because I typically run low on calories due to the fact I only eat seafood and chicken.

Sounds good to me......I sometimes crave good old fashioned tuna casserole, something I had a lot of as a kid! (many moons ago mind you!) Thanks for the recipe!

Sounds excellent, except I'd be replacing the celery with mushrooms. Mmmmm, creamy mushroom tuna-ness... my mom always used cream of mushroom soup for her tuna casserole, while my aunt used cream of celery. I liked my mom's better.

Either way, major comfort food.

Wouldn't going with the low fat stuff up the carbs? Almost every low fat product I've seen had more carbs, and ussualy sugar added.

Do you think this could be successfully adapted to dairy-free? I could use coconut cream in place of the mayo and cream but gosh there sounds like there's a lot of cheese in/on it! Is this a major part of the flavour, or do you think it wouldn't be missed if I omitted it??

Real mayo has no dairy in it, just egg and a good quality oil. The cheese is a big part of the flavour and texture, so it wouldn't be the same or anywhere near without the cheese, I think. Perhaps a vegan cheese product would be a better idea than just removing the cheese. It rather depends on why you want to remove the dairy. If a mild to moderate lactose intolerance, you can use cheese, most of the lactose is gone. If a casein intolerance, then a vegan substitute would work better.

And coconut cream? I think the flavour would be wildly altered, unless you got some other strong flavours in there. If you can handle cream cheese, this might make a better substitute, thinned a little bit, and there are vegan alternatives for that, too. I personally like a lot of diced green onion with a mixture like this, perhaps that would help with the flavour.

Default Mmm Mmm Mmm!

I made this the other night with the tuna and it was awesome...but tonight I made it with turkey (soooo much leftover from Thanksgiving!!!)....and it was equally as good. I think it would be great tasting with almost any meat, maybe even hamburger or buffalo.

I entered the ingredients for the tuna casserole into the My P.L.A.N. and I got it to be about 10 carbs for six servings, considerably more than the 4 that I read here....not sure what to think but I'm going with the higher.

Susan,

Were any of the products you used fat free or reduced fat? And did you adjust the amounts for the ingredients? When I ran this through MyPlan, it looked to be a little over 3 carbs. I added values for the topping, pepper and parsley as well. The whole recipe was 23.21 carbs minus 3.31 grams fiber, for a total of 19.9 carbs. Divided by 6, it comes out to 3.316 carbs per serving.

I just wanted to let you know my findings.
