Yep, that's how I do it too. I got tired of having to run to the neighbours on both sides to reassure them that I'm not burning the place down, I'm just cooking. The joys of apartment living!

True it saw really super smokey when I did it and DH had to open all the windows lol

This! Funny, my neighbour is going to school to be a chef and she sets hers off all the time! I am always thinking "What the hell are you doing!?" LOL.

first things first:
dry age that piece of meat.
when you get it good and dehydrated, then it's ready to be cooked.
whether you grill or cook in an iron skillet, the steak must be dehydrated or you're going to be cooking it in water..
almost like poaching....

so first things first. dehydrate the piece of meat.
then, whatever method you choose to cook that piece of meat in...
will be awesome!
