Default Need kid friendly veggie dish ...

.........besides broccoli & cheese!!! I have had good success getting my stepkids (13 and 11) to eat the LC meals except for the veggie sides! It took a long time for me to get to a point of not having to prepare 2 meals, but they haven't liked any of the veggie sides I have tried except broccoli & cheese. Which after almost a month of cooking it, I quite sick of it, and so are the kids and dh. Plus I am preggers and the smell is really starting to gross me out. Anyway, is there a recipe for a veggie dish that is kid approved and LC?

- I like cole slaw made w/ splenda instead of sugar.
- Zucchini sauteed in butter and at the end add a tbs of sour cream (kind of like a stroganoff)
- turnips made like hash browns or french fries (a little sweeter and moister BUT the texture is pretty darn close)

I will try to think up some more.

Recently, I made fried zucchini sticks for my kids. At first they didn't even want to try them, but after the first bite, they loved um. I just cut the zucchini in strips, coated them in egg white, rolled them in Parmesan cheese and then fried them to a crispy brown.

My kids also like raw baby carrots w/creamy ranch dressing for dipping, sliced cucumbers w/salt, French style green beans in butter sauce, they even eat salad.

I have two kids with very different tastes when it comes to veggies. I make:

+ celery sticks with peanut butter filling, (yes, with dinner)
+ cucumbers cut up for dipping into ranch dressing
+ cucumber salad (cucumbers, sour cream, splenda, venigar and salt and pepper to taste)
+ spinach cooked according to directions, drain, add sour cream, chopped up hard-cooked eggs and crumbled bacon. They eat this like it was desert!
+ Mushrooms sauted in butter
+ Cauliflower with butter and salt (or topped with cheese)
+ Snap peas
+ Green beans

Look on the recipes site, also. Some of these my kids eat, some of them my kids don't.

Have you tried Karen Barnaby's faux mashed potatoes? My gf, a confirmed mashed potatoes, will even eat this dish. Click on the Low-Carb Recipes link in the orange bar at the top of the page to begin looking for it.

To tone down the sourness of real goat cheese, I use a pasteurized goat cheese spread.
