The Montignac plan is more of a low glycemic diet than low carb, I'd say. He recommends that you have fruit first thing in the morning on an empty stomach, then 20 minutes later a breakfast consisting of whole grains and fat free dairy products. He gives you a list of acceptable fruits and whole grains to use as a guide. This week I have been eating strawberries first thing, followed by a whole grain bagel with sugar free jam. Lunch is a protein meal, consisting of lean meats, vegetables (from the "appproved list"), and can include full fat dairy products as well. You would never combine carbos (whole wheat pastas, breads, etc with protein meals ever).
Dinner can be either another whole grain carbohydrate meal (like whole grain pasta with fat free low carb sauce), or any number of fat free vegetarian style meals. From my experience, I lose weight best when I eat the carbohydrates at breakfast only, then eat low carb protein meals the rest of the day. This gives my body a chance to burn off the carbos early.
Food combineing low glycemic foods is the key to his Method. Be forewarned that he is French, therefore his meal plans are presented in traditional french courses, usually four per meal. But don't picture a Thanksgiving dinner; the courses consist of tiny amounts of food, so you feel satisfied after eating. What I do is borrow receipies from Suzanne Somer's earlier books (which closely resemble Monitgac's) and use them instead of Montignac's.
