Lightbulb Creole Thai Fusion?

So I cooked chicken gumbo most of the day.... have been following a recipe that doesn't use a roux - and instead of rice I put cauliflower ... except I'm doing it on a crockpot ...

I didn't have the chili peppers .. was thinking it was missing something ... and as I went and added the stovetop gumbo ingredients into the crockpot with the whole chicken ... I was somehow reminded of Thai food ... I don't know what came over me but I acted completely impulsive and added 2 cups Coconut milk, lime rind, and lime juice into it ...

For the next hour I beat myself up - "why did I do that? I wrecked a whole days worth of cooking" ...

And when supper time came .. I tried it. Holy cow! Good. SUPER good ... its like Coconut Curry soup .. with gumbo .. and the flavors went together quite nicely ...

As far as carbs .. by skipping the roux and the rice .. everything is low carb .. per bowl it may even be at induction levels...

So thankful it turned out good ... impatient cooks are a bad thing ...
