Default Almond flour pancakes

I have made these several times for myself and find them very tasty and a departure from eggs.
1 cup almond flour
2 eggs
1/4 cup water (for puffier pancakes, you can use sparkling water)
2 T oil
1T sweetener( I use Splenda)

Mix ingredients together and cook as you would other pancakes. I like to us a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top like the regular pancakes. (I have found they do somewhat)
Serve with sugar free syrup
Yield: Six 4 inch pancakes.

I just cut the recipe in half if cooking just for myself.

6 total carbs, 3 fiber, in 1/4 cup
Which may be a bit much for every day.. But on occasion I find it very good. I am still losing but as I say, I don't have them but about 3 times a month.

is the oil for cooking them with or do you add the oil to the mixture?
