Default MIMs

OMG....just made the muffin in a minute with flax meal.....SOOO good. Has anyone else made these? If so, how do you make it? I used splenda and cinamin....but I'm thinking there are lots of other possibilites. And hardly any carb in the flax meal.

I use the mims recipes from the Atkins website. I like them but haven't made them lately. I'm going on vacation soon and may e they'd come in handy again. Don't you love when you find a great recipe that you just know will. Evoke a staple? I do :0) enjoy!

So as not to "overdose" on ground flax I adapted the basic MiM recipe to make my flat flaxbread, which means I can knock out a piece of "bread" in minutes if I fancy a sandwich or toasted cheese!

I also sometimes add goji berries and some sweetener to make a sort of fruitbread which is excellent toasted and topped with plenty of butter.

And I actually lost a pound since yesterday! Between a portobello pizza and a MIM, I was afraid of gaining....so I'll be making a MIM for my breakfast this morning!! I'm going to check out that bread recipe....would love to have "toast" with fried eggs!!!

I've noticed some stomach cramps...that's got to be associated with the flaxmeal....but I've become much more "regular" hahahaha....I'm doing IF today so when I get home from summer school, I'm going to have a MIM for lunch and see how long that keeps me satisfied....definitely notice a "full" feeling after eating one!!! Less is more!!!

I know this is gross but one dinner of flax/parm pizza and one lunch of a MIM, makes for an interesting morning in the bathroom...needless to say, I lost 1.6 pounds after that experience...holy flaxmeal, batman!!

If you can't find a variation to suit you in either of these three threads there probably isn't a variaiton for you. These threads are chock FULL of diffierent options and flavorings.

Ohhh..thanks for those links for more varietites. I could eat a MIM everyday, and go through jags when I do. But twice a day...not so good.

I also like this flax bread focaccia recipe, because can cut into "slices", keep them in the freezer and pop into a toaster when bread cravings hit. The comments section on this recipe also have many taste variations.

I wouldn't eat it twice a day either....I had the pizza one night and then a mim for lunch the next day....guess it kinda caught up to me But I'm good today!!
