Default Leftover pork roast - any ideas?

Hello all - looking for some creative ideas for a leftover pork roast from last night... anyone out there have any good leftover recipies?

Slice, pour on some green salsa (tomatillo based), heat then melt a touch of provolone or jack cheese on top.

Good with grated cauliflower (mock rice) or pureed cauliflower.

Pork "hash" - I use grated daikon (cooks up like potatoes), diced bell pepper and onion and shred the pork. Cook up in a little canola or olive oil and top with some pepper jack cheese. No daikon? Just use bell pepper and onion and add a couple of scrambled eggs. It's the perfect breakfast hit. Cheers!

I usually make a stir fry with shirataki noodles, green onions, sesame oil, and other veggies on hand, like shredded cabbage, mushrooms, etc. I make a homemade peanut sauce with peanut butter, rice vinegar, soy sauce, and flakes of crushed red pepper.

If you like, add some nuts to that bad boy. Cashews are yummy, but fairly carby.

We like to make pulled pork, or if I'm pressed for time, I'll throw it in the crockpot with whatever vegetables I happen to have on hand, bouillon cubes & water, assorted spices. When we get home dinners ready
