Default Zucchini Ground Beef Casserole

Just saw this recipe on Food.com- sounded good and like a yummy way to use up some of that extra zucchini from the garden.

I think I might also add some diced red pepper or jarred roasted red pepper, too, for taste and extra color. Think it would be good by itself or over cauli-rice.

Sounds very good! Kinda reminds me of my Unstuffed Zucchini recipe, but this one is more Mexican and mine is more Italian in flare.

Sounds like a good, simple everyday meal. Best of all: no cheese! It's really hard to find recipes around this site without dairy.

No garden zucchini/courgettes here, but have been buying lots of them since they're so cheap now!

Will definitely try this recipe, I love cumin! Might have to find an alternative for the jarred salsa though, but might make it myself, too.

Making this for dinner tonight and since I'm a single gal for a week, I'll have some leftovers! I don't have zucchini but I'm going to try it with yellow summer squash- review tomorrow.

Well, this was really good and easy! I did dice about 1/2 of a red pepper into the meat and onion mixture and let it soften before adding the salsa. Also, at the very end I stirred in 2 oz. of cream cheese to make a creamier sauce. Very much a comfort food- kind of felt like something my grandma would have made. Try it!
