Peel an eggplant. Cut into thin slices. Salt and let sit for 20-30 minutes. Rinse and dry. Put slices on a baking sheet. Drizzle or brush with olive oil.
Bake in a preheated 400 degree oven for 8-10 minutes.
They taste almost like potato chips if you let them get nice and crisipy.

thats it, the next eggplant I see, its chips all the way. thanks for this. I know they use the skins too as a garnish, but they fry them as a crunchie snack! no reason that we can't do both!
I am going to the beach with a bunch of family at the end of the month..... thank you sssooooo much for this idea! This is most defiantly going with me. My family is all about the food (all amateur chefs) so this will not only be healthy (all of my family is average weight.... I'm the only one with a weight issue) but something that no one else will be bringing.
These are really good but work intensive. To let drip and then rinse and then pat dry, whew. I can't help think these would be a good seller at a health food store, wish they were.
They seem to take longer to bake in my oven so went for 25 minutes
They stick to the cookie sheet. So tried parchment paper but that just draws out more water and takes forever.
I brushed them with basil garlic infused Olive Oil and they were good.
They picked up enough salt from the drying process so didn't need to salt them.
