Many fats, especially certain oils, are essential to good nutrition. Olive oil is particularly valuable. All other vegetable oils are allowed, the best being canola, walnut, soybean, grapeseed, sesame, sunflower and safflower oils, especially if they are labeled "cold-pressed" or "expeller-pressed." Though peanut oil is not mentioned, I assume it would be allowed alongside soybean oil as they are both legumes but dont know if it is one of those oils you have to watch at high temperatures.
