Default Cucumber Tuna Rounds

~Stacy's Cucumber-Tuna Rounds~

peeled cucumbers-sliced in half crosswise
8 oz. Starkist tuna-in pouch
1-2 Tbs. Light/FF mayo {by your taste}
1/4 C. diced onion
1/2 Tsp. fresh lemon juice
paprika, celery salt, salt, and pepper to your taste
Your favorite WG Crackers/Triscuits

Scoop pulp from "center" of each half.
You should have two tube-like halves each with one end closed.
{Discard pulp}

In a bowl, combine tuna, mayo, onion, spices, and lemon juice.
Mix well using a fork. Taste to see if you need more spices.

Fill each cucumber with tuna mixture.
Wrap in plastic wrap: Refrigerate for 30 mins.

*Slice each cucumber half into 1/2-inch slices: Serve on crackers.*

I'm curious as to why you use LF/FF mayo since that has 2-3 carbs per T rather than regular that has 0.4g per T. This sounds interesting! I'm just wondering if the full-fat version didn't set right or something.

Stacy does, or did, South Beach which is slightly higher carb and lower fat the Atkins. More like the OWL stages of the Atkins plan.

If you use regular mayo and skip the crackers, then this is a wonderful snack on all low carb plans. That is the secret to success on any eating plan, modifying things to meet your personal tastes and needs.

Correct! SBD was not workin' for me bc you add the carbs back to quickly and in my case I would go nuts!

Been doin' Atkins now for a little over 6 days! Love it! Not even cravin' carbs..

Yes, adjust recipe to your plan!

Makes a wonderful snack/lunch.

A nice "munchie" as well when watchin' movies and the boys are eatin' popcorn!
