Ok, beat some eggs... with water or cream

on a non stick pan, spray some "unsticking spray" and pur on a little egg - make it as thin as you can covering the whole pan and cook slowly until you have a crepe. Do this several times then..

either layer the crepes with butter and sugar free sypur (or cinnamon) and roll up, or, refrigerate and later with whipped crream and berries for a cake.

They should also work fine without any water or cream..... and the possibilities are endless! I have used eggs crepes for:
- lasagna noodles
- cannelloni noodles
- taco wraps (tortillas)
- sliced thinly in place of noodles in soup
Yum!
