Default pork roast tonight, but what about my gravy?

I think tonight might be my 1st difficult eating time, I grew up on roast "n" gravy, the idea of no potatoes, rice, or noodles with gravy is hard, but I need gravy, usually made with flour, OK, I know, NO flour, but,cornstarch has 7g per Tbsp, I am sure I can reduce my stock enough to use only 1 Tbsp. for thickening, of course I will not eat the full amount, so I wont get 7g, I already have 7 carbs in me today, I am only on day 5 so my carbs are really limited. Suppose this might be ok? Please say yes, I love gravy, even if only on the meat. So far, I am very excited, this really works!! 1lb a day gone bye bye. HELP

It probly won't kill you to use 1 Tbsp of cornstarch.. you could also try cream and/or egg yolk. You could consider getting guar gum or xantham gum or a product called ThicknThin Not Starch for future use, though.

When I make pork roast, I smear powdered dry mustard and lots of seasonings on it. I also sometimes make a dijon mustard and cream sauce. I just love the warm mustard taste with pork.

oooooh that sounds really good too, never had it that way, think I will combine both, cream, egg yolk, dry mustard and most likely some fresh cut rosemary from the yard, I am getting hungry!

He made gravy once, out of soy flour. It was honest to goodness good!!! although everything els sounds good too. Just my $.02

Hi this may be to late for you but I have descovered that I love mashed Cauliflower or Mashed Pumpkin with roast meat. I make the gravey and reduce it as much as I can to get a nice rich flavour then whip in a table spoon or 2 of the pureed veg this thickens the gravey perfectly.

This come from when I was growing up and my dad often used mashed potato to thicken soup and stew
