Default Pesto Sausage Scramble

Hi all!

I threw this together today and really just eyeballed everything. Your mileage may vary. You can substitute for any brand / type of food you would normally use, these are the ingredients I used today.

Pesto Sausage Scramble by Rachel Smith

4 Organic Eggs
4 pre-cooked and heated jimi dean sausage patties
3-4 Tablespoons of Pesto Sauce (I found one that is 1 carb for 2 Tablespoons)
1 clove of Garlic (or 8 sprays of liquid garlic)
Salt and Pepper to taste
1/4 cup Chopped Red Onion
Cheese to taste
Dash of heavy whipping cream (you could use 1/2& 1/2 but that adds more carbs)
butter for the pan

Melt butter on medium heat (I use a non stick pan), then add the chopped red onion and sauté lightly.

In another bowl, whip up the eggs with the pesto sauce, cream, garlic, salt, pepper.
Once the butter is melted and the pan is heated pour in the egg mixture.
While that is cooking you can microwave the sausage patties and then cut them up and add them to the egg mixture in the pan. Scramble it all together thoroughly. Right before the eggs are completely set, add your cheese. I probably used about 1/4 cup maybe a tad more.
Finish scrambling until cooked to your desired texture and serve.

This made enough for me to have for breakfast for 3 days. YUM!
No clue what the carb counts are sorry.
