Default Cream Cheese Cookies - I need some help

Hi all. I found this recipe for cream cheese cookies - and although still on induction I would like to make them for my boyfriend - he is on low carb but farther along than I. Plus we have lots of friends who come over and like to stick their hands in the cookie jar lol.

And Ideas on how to make this cookie low carb? It has sugar which can be subbed with Splenda (Thank goodness for Splenda), but it has flour... not sure of the subs for that that are low carb. Here is the reciped... Can anyone help me out please??? As is the recipe yields72 cookies with each cookie having 54 calories, and 6.0 net carbs.

Cream Cheese Cookies
1 cup butter, softened
1 (3.00 ounces) package cream cheese, softened
1 cup sugar
1 egg yolk
1/2 teaspoon vanilla extract
2 1/2 cups flour

1. Preheat oven to 325 degrees F Lightly grease cookie sheets.
2. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
3. Beat in egg yolk and vanilla.
4. Stir in flour until well blended.
5. Drop dough by spoonfuls, making an indentation in the center with your thumb or other object; fill with preserves, or press candy into center.
6. Bake for 15 minutes in preheated oven.
7. Cookies should be pale.

I suppose you could try almond flour, I like using it for cake.

Thanks...I bet it would be good on breaded chicken too! Didn't even know it existed! Any other ideas?
