Lightbulb Frozen Cream Cheese Balls -- easy & tasty!

I searched and didn't see anything like this on the forum... I apologize if this is redundant.

I decided to try this last night when I was bummed about buying ice cream that I couldn't eat (my husband can). The texture is a bit like ice cream, and the Splenda and cinnamon make it sweet. Obviously you can modify the recipe to make more or less.


2 TBSP Splenda
2 TBSP cinnamon
Cream cheese (straight from the refrigerator works best)

Mix the Splenda and cinnamon in a bowl. Using a melon-baller (I use a small ice cream scoop-looking-thing that is intended for cookie dough), scoop out 6 scoops of cream cheese. Roll the cream cheese balls in the Splenda/cinnamon mixture. Put them in a plastic bag (or on foil) and freeze them for 2-3 hours.


Let me know what you think, or if you make something similar.

mmm.. you could also modify them to make little frozen cheescake balls. i.e. roll them in chopped almonds, or even dip them in LC Chocolate. I'll have to try that!

I used to be addicted to these! You can also roll them in Jello powder and they are quite tasty!

I have some in the freezer. I mix mine with peanut butter then roll in some crushed macadamias.... Perfect lil grab on the go balls
